Zucchini Bread

In mixer or medium bowl with mixer:
Beat 3 eggs until thick and light yellow

Slowly add:
2 cups white sugar
3-4 tsp. vanilla
Blend well.

Then add:
2 cups shredded zucchini
1 cup salad oil

Sift and add:
3 cups flour
3 tsp. cinnamon
¼ tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
Mix well

Add ½ cup chopped walnuts if desired.
Pour into 2 greased medium size bread pans.
Bake at 325 for 1 hour.
Cool 10 minutes before removing from pan
